Making South African boerwurst

Yesterday was a national holiday here in Malawi to celebrate "Martyr's day ". We had a nice productive morning where I played a round of
Golf and the kids had swimming practice . After that , we made sausage .. Then consumed it .

One of my favorite things about living in Southern Africa is the access to a South African sausage called boerwurst . Boerwurst is the South African answer to a bratwurst and in my opinion a better tasting sausage . I have the good fortune of working with a few wonderful South African families who invited us to join in the process of making homemade boerwurst .. They made the mixture which consists of minced meat, pork fat , coriander , cloves and other slices  stuffed into sheep intestine . It is a favorite amongst South Africans and many people have their own secret recipes . Yesterday me and the kids headed to our friends' home to help make the wurst .. I think we made about 30kgs =66 pounds of sausage . We now have about 20 pounds if sausage in our freezer waiting to be consumed . After production , everyone came to our home for a braai.. It was delicious . Plans to do it again are already in the works .. Not much else to say except its hump day and the national swim meets have officially begun . Many events are taking place here on campus (Kate swims the 400m freestyle tomorrow ) , then we head out of town to Blantyre on Friday .as I write this I am watching a bunch of 7th graders learn how to throw a baseball .. Like fish out of water . Hope all is well . Photos from the sausage making event below .
